[é], [er], and [ez] all sound like 'écrire'. An infinitive can be used as the subject of a sentence to express an activity. The infinitive functions like a noun in such sentences: ‘être poli, c’est important’ - 'being polite is important'. We normally translate French infinitives used as nouns with the -ing form of the verb in English.
