‘Ese’, 'esa', 'aquel' and 'aquella' all mean 'that' before a singular or uncountable noun. ‘Esos’, 'esas', 'aquellos' and 'aquellas' all mean 'those' before a plural noun. 'Aquel', 'aquella', 'aquellos' and 'aquellas' refer to something far away in space or time. Spanish demonstrative adjectives agree in gender with the noun.
