I can use singular 'estar' to talk about how someone is today.

The sound-symbol correspondences [e] and [i] can be practised with many names of people from Spanish-speaking countries. 'Estoy' means 'I am' and 'está' means 'she, he, it is' or 'is' when talking about mood and temporary states. When the person or animal being described is male adjectives end in -o and -a for female.
